MPN™ Yogurt Parfait and Granola Mix
- A Partially Brain Healthy Recipe[1] -
Note: This recipe is full of sugars, so it is high-calorie
YIELDS: 50, 5.5 oz parfaits
INGREDIENTS: AMOUNT:
| YOGURT: | |
Plain yogurt, Greek style preferred |
12 pounds |
Honey or stevia |
2 pounds or ½ to 1 tsp stevia |
Mixed-berries or seasonal fruit |
2 quarts +1 ½ cups |
GRANOLA MIX: |

Old fashioned oats (not instant) |
3 quarts or 2 ¾ cups |
Wheat germ |
1 pound = 3 2/3 cup |
Brown sugar |
½ pound =1 cup + 2 TBsp |
Flax seeds |
1 pound = 3 cups |
Cinnamon, ground |
7 ½ TBsp or scant ½ cup |
Nutmeg, ground |
Scant ¼ cup |
Honey, or half honey half maple syrup |
2 pounds (2 2/3 cups) |
Canola oil |
4 ounces =2/3 cup |
Optional: water |
½ cup |
Almond slivers |
1 pound =2 2/3 cup |
Blueberries, dried |
1 pound = 3 cups |
METHOD:
YOGURT:
1. Mix yogurt and honey or stevia or truvia.
2. Pour yogurt mixture into parfait glasses.
3. Add 1 ounce fruit of choice.
4. Top with 1 ounce of granola.
GRANOLA:
1. Mix all dry ingredients together, except nuts and any fruit, set aside.
2. In a saucepan heat liquid ingredients to a simmer.
3. Drizzle over dry ingredients.
4. Mix and squish mixture into clumps.
5. In a convection oven bake at 275 degrees for 20 minutes on a sheet pan with parchment paper, sprayed with nonstick spray. Bake for 30 minutes in a conventional oven.
6. Add fruit and nuts and bake an additional 10 minutes.
